We would like to know the number of emails that customer sent on a day and we've responded to. How to easily track this?

You can filter a Custom Report by Email channel and pull up on the specific time range you are looking for:
From here you can also see the conversations, and download a CSV. Another option would be the Conversations Report filtered by channel, which shows a variety of metrics:
