I found with dynamic content how to change the text according to the right criteria (language) but I can't change the text on buttons, dynamic content seems to only be available for the subject of the email and the text blocs.
Is there another way than to duplicate the email, and have 2 different emails to send ?

You can definitely insert buttons into your dynamic content. You'll just want to click on the + on the left side of your composer and add the buttons in each conditional statement:
