I need to do an analysis about my team's response time, but for that I need to extract the maximum response time information in each conversation (admin replies after a contact reply).

There is a "Max" option in reporting. If you go to Reports->Responsiveness and on the right hand side, change the settings (gear) icon to "Max" after applying the filters you need. Does that give you what you're looking for?
