Is it possible at the end of a product tour to ask the user to rate it, or do like a CSAT of this ?

That's actually possible with Intercom Series, You can trigger a post message with a reaction or outbound custom bot and ask users to rate the overall onboarding experience.
Here how it will looks like:
With a custom bot, you can even ask more questions like what was the best and worst part during onboarding.

At this point there is no way to do this in a product tour as far as I'm aware - but i like the idea. You should pop over to the products wishlist group here in interconnected and log it there. Hopefully it's picked up for a new feature!
