I need the bot to capture this message, from Whatsapp, from the customer's response and assign it as a variable so that I can use it in an API

You can collect information from customers through the use of a 'data attribute' in a Custom Bot path but I believe currently bots aren't compatible with WhatsApp. So you won't be able to collect the information from users through WhatsApp using this Custom Bot.
This would be a feature request! I can definitely flag this with our Product team for you 🚀
